This recipe comes together in approx. 30 minutes - (even less if you prep the dressing + cut up some ingredients ahead of time)!
Kid Report (Did My Kids Eat This)
Yes, they just prefer the bowl separated on a plate! I think a lot of kiddos don’t necessarily like things all mixed together (at least my kids don’t), so just separating things out generally increases the chances that they will eat it!
Meal Prep (Set Yourself Up for Success)
Make Dressing: combine all the Ginger Peanut Dressing ingredients in a mason jar, cover and refrigerate until you need it! Be sure to let it come back to room temperature and give it a good shake before using.
Prep Bowl Ingredients: option to cut-up the mango and cilantro to store in the fridge until ready. A large batch of rice could also be made ahead of time, if you are making another dinner that uses it.
