Dairy-Free + Gluten-Free Report
Dairy-Free: simply use a dairy-free yogurt alternative in the sauce and either omit the feta cheese or use an alternative there as well.
Gluten-Free: just use gluten-free breadcrumbs in the meatballs and serve without the pita or use a gluten-free version!
45 Minute Weeknight Dinner
This recipe comes together in approx. 45 minutes - (even less if you prep the sauce + pickled onions ahead of time)!
Kid Report (Did My Kids Eat This)
Yes, they just prefer everything separated on a plate! I think a lot of kiddos don’t like everything piled on together (at least my kids don’t), so just separating things out generally increases the chances that they will eat it!
Meal Prep (Set Yourself Up for Success)
Make Sauce: combine all the Herby Green Sauce in a small food processor and refrigerate until you need it!
Quick Pickled Onions: if you plan to serve with the pickled red onions, those can easily be made ahead of time and stored in the fridge until ready.
Meatballs: if you have time, you could even make the meatball mixture, form the meatballs, or cook them ahead of time. Getting as far as any one of these steps will make your dinner even easier!
